本を買うようになるまえ、（学生のころ）に買った雑誌です。雑誌の増刊号だからかなぁ、安いのにいっぱいレシピがつまってました。雑誌の場合、本と違って見開きで１レシピというような見やすさはないけれど…。

この本を読んで、まだ疑問はいろいろ残っているのだけど…勉強の本です。「こつ」というよりは、お菓子の素材の解説といった感じです。

とーってもおいしそうです。プロの技をぬすみたいと思うのですが、分量が多いし、とてもこってるのが難点。でも、さすがにとてもおいしいのも。この本をきっかけにグラム単位で計量するようになり、デジタルはかりにかえました。フォレ・ノワール、タルト・オ・ポワール、ハートベルグは一応マスターしたかな。他にも時間がとれたら挑戦したいのがたくさんです。 続きを見る »
